Tortillas. No. Exceptions.

Ingredients:

  • 6 Tomatillo Husk

  • 1 Cup Masa Harina

  • 1 Teaspoon Kosher Salt

  • 1 Cup Water

Special Equipment:

  • Tortilla press

  • Gallon size ziplock bag (edges trimmed)

  • Tortilla warmer

The Process:

  • Place tomatillo husk into a bowl

  • Heat water until boiling

  • Pour water into bowl of tomatillo husk and steep for 10 minutes

  • Combine Masa Harina and salt

  • Strain tomatillo husk reserving the water

  • Combine the tomatillo tea water with the Masa Harina

  • Once loosely combined turn out onto a cutting board

  • Knead for 8 minutes

  • Roll into a ball and cover with plastic wrap for 30 minutes

  • Place cast iron skillet on high heat

  • Divide into golf ball size dough balls and cover with a moist towel

  • Get out your tortilla press

  • Place trimmed ziplock bag in the press

  • Place dough ball in the tortilla press

  • With firm pressure press the tortilla

  • Remove from ziplock bag

  • Place into HOT cast iron skillet cook for 30 SECONDS

  • Using a fork flip the tortilla and cook for 20 SECONDS

  • Remove and place into a tortilla warmer

  • Place a dampened paper towel on top of the tortilla warmer then place the lid on

  • Repeat the process
